4 — Arkansas Fried Bologna Sandwich

Thanks for keeping it simple on a weekend where I didn’t have a lot of time Arkansas.
Calories: Who cares Servings: Not enough Cook Time: Too damn long! Dish: Breakfast, lunch or dinner, sandwiches are good any time.
(or you can use Mortadella, or similar)
4 slices Rye Bread
2 table spoons Ketchup
2 table spoons Mayo
1 tea spoon Dijon Mustard
A large pickled gherkin
Mix the Ketchup, mayo and mustard in a small blow. Dice the gherkin finely and add that in to finish the sauce (may extra sauce to put on burgers, you’re welcome)
Add 4 slits around the edge of your bologna slices, and fry them until they are slightly crispy.
Toast your bread, then cover both sides with sauce, layer the bologna and lettuce. Eat.
